Won't the pointer just reinstall into another scale ?
If I have to keep the original tank scale, I will just soak in water for a day and then blow it out with compressed air.

You could possibly use another one from a Genesis 1000 and switch the pointer but it would also be a used one. The one you have linked from Amazon is completely different. I've restored a bunch of those old scales to like new condition, it's really not too difficult to do.
 
I'll soak it in soapy water for a day and then blow it out good.
Rattle can it and put on a new sticker and call it good.
I probably won't take it apart, they seem to clean up good and then a little W-D40.

You can only disassemble the tank scale so far. I like to spray the whole thing down with WD 40 and let it soak a couple days in that. Then you can get the top wing nut off and remove the spring and threaded shaft from inside. The WD 40 also does a nice job of loosening the old sticker up for removal. Clean the rust off of everything with a wire wheel and sandpaper. Paint all the parts and reassemble. I've never tried soaking it in water, but I guess that would work just fine for getting the sticker off anyway.IMG_20240603_152135821.jpg
