I decided to finally do it on the last long weekend of this summer.
I chopped up some Jalapenos and stuffed them with cheese curds. Placed these into the middle of my meatballs. ( local butcher mixes this ground beef up with spices so they are ready to grill ) Cored out a large onion and stuffed each layer with a meatball, a little spice on top and then wrapped it all in bacon. I grilled them on indirect heat @ 300ish for close to an hour. ( had my thermometer on ) Added rib sauce at the end for that candy look
