Harry Soo's Pineapple Onion Rings

Made the Pineapple Onion Rings last night. Smoked them on the kettle at 350*F using Hickory. They were on the grill for about 1 1/2 hours. They look kind of burnt, but they were not. The brown sugar in my rub turned dark.

Those look FANTASTIC Levi!! Did you make just four or were there more? Can you share how much prep time there was and any hints on wrapping the bacon or other help? Definitely I'll make these an an appetizer or course for friends - very different and everything tastes great with bacon! Great job.
 
I bet those tasted GOOD....I need to do this soon! Still waiting to see a picture of the inside of one of these.
 
Levi, where did you find the recipe for these. I've looked and can't find it. These look so good and are so original, it will blow my friends minds when I pull these off the smoker! In my book, these look like a must do for the Memorial Day race party! And these will have a major WOW effect this fall tailgating! If you could post a link to the recipe, I would greatly appreciate it.

I saw that recipe last week also and must try, nice job.You can find it in the recipe section I think, pretty sure Chris Allingham posted it.

I just made 5 for a test run. They took a little bit of time because I used a fresh Pineapple, Harry used canned pineapple. I had to cut it up first, trim the slices down to fit the onion slice. Each 1 took 3 slices of bacon to cover. It wasn't to bad but it was a last minute thought and I was rushing a bit. If I was making a bunch I would prepare them way ahead of time.

There's the link, I will make these again for sure
 
The next time I make them I will use 2 onion slices instead of 1. My wife said the onion was kind of lost and I agree, but they still tasted good!
