Thought I'd throw it out there and see what everyone's plans are for their WSM to start off 2011.

Mine will be my first whole turkey using the Apple Brine recipe and method here on the site. Really looking forward to seeing how this one comes out on New Year's Day!

No idea, but I'll be doing some spares some time in the next week....which reminds me, I need to get them out of the freezer. Thanks, and happy New Year, everybody!

I am planning my first attempt at some pork butts on the WSM. Right now I'm thinking about trying out the Mr. Brown recipe. Then I will be sitting back to watch the Sooners hopefully win the Fiesta Bowl. Happy New Year Everyone!

For next year, a 30lb ham on the WSM and a rib roast on the OTG.
Hope you all have a safe and happy one!

Tim

I have to work 1/1/11, so mine's gonna be idle.
I get a Weber Rib Rack for Christmas, so's I'm planning on doing some Baby Backs soon.

Called my butcher today and asked to order me a brisket USDA Prime! Unfortunately, will not be there till Friday, so not much time to sit in the fridge with some rub.

My second attempt at a brisket so hopefully it comes out good. Probably start @ 8-9pm on the 31st and enjoy by "linner" on the 1st.

I may try a butt too (BOB), but haven't decided on that yet.

Happy New Year All!!

I've got the tail end of a turkey that I'm gonna smoke for a buddy who's coming over to watch the Gators play. I bought a whole turkey and only cooked the breast for Christmas,so it's turkey legs and thighs for the game.

And beer

Doing some ABT's to take to a party Friday night, also doing 6 racks of ribs to take to friends house on New Year's day. I guess I'm ending the year right rather than starting it off right. Oh well.

In time for the ROSE BOWL (4pm CT), at least ONE rack of spares will be done...
planning on smoked Cabbage also...
Grilled she-cone` Wings are needed...
Fresh Kielbasa will be served with HOT horseradish (trad.)...
Bloody Mary's/Maria's and huevos start the day...
and, Howse/Correll Caviar!
It'll be a BADGERDAY

Sitting in the garage idle, but not too lonely. It will have my 2 performers to keep it company while in south Florida for the weekend.

Down in Florida I will be stuck with a gasser. Cooking a couple whole beef tenderloins, won tons, several dips, and an assortment of other things. Oh, and beer of course.

My WSM is resting for a bit while I improve my grilling technique. The kettle will be cooking a couple Cornish Game Hens on NY day. The best to you all.

Well I HAD planned on doing a Wagyu briskie but I didn't get my order in soon enough so I figured I'd go choice, well no choice briskets in sight so I picked-up a 13.5 lb select grade

(oh how the mighty fall lol); I'll be doing her high heat to insure a moist briskie.

I'll also be doing some wings and a fattie.

Cornish Game Hens sound good. I haven't done that in a long while.

I did a chuck roast for shredded beef taco's today and a rack of beef ribs just because. Also did some abt's and some stuffed poblanos and an egg plant for baba ganush. On new years we will see a couple of butts go on for an overnighter.

A very happy holiday season to all.
