Happy Holidays To All - What's Your WSM Doing On New Year's Day?


 
Traditionally we make a $200.00 pot of Gumbo (king crab legs and claws, lobster tails, jumbo shrimp, italian sausage and chicken wings with all the mixings) along with delicious sides and appetizers. This year will be the same, but adding a 5lb brisket and a couple rack of ribs

I'm doing a butt for slicing tomorrow. i decided to de-bone it to make slicing easier. it was the first time i have de-boned a butt. it wasn't pretty.
 
Picked up a 13 lb. brisket (USDA Choice for $1.88/lb!) earlier today. Going to cook it over high heat for dinner tomorrow.

Ironically, many parts of the country will have a warmer New Years Day than Phoenix. Enjoy!
 
I'm trying my 1st overnight with a 8 pound butt, mighty cold here in Denver (supposed to get -8 tonight) so this is a grand experiment that hopefully turns out well. Happy New Year to all!
