Looks like a great start! We have better smoking weather out here, so my project will get to hit the smoker......oven sounds like a good idea for your neck of the woods! ;)

It looks like I may be doing the same, not looking forward to it.
You reminded me I haven't made that jerky recipe in a long time, got to fix that.

Rich, I was in pain AND physical therapy off and on so much during the last 12 months, when X-rays showed a replacement was in my future, I scheduled as soon as possible.
Couldn’t WAIT until it was done.
Heard soo many great things about others experiences afterwards….
Now it’s just letting it heal and I should be pain free for the first time in many many months.

So, good luck to you with your decision… hope everything goes well for you.
Here ya go…. Have some jerky!

Thanks for the encouraging words Jim. My doctor is trying to avoid it with meds and exercise, so far it does seem to be working, but the big question is for how long.
That's some fine looking jerky. What cut of meat did you use?
