Halloween Thanksgiving

Just got my breast on! I am in the mood for some turkey/practicing for the big show/getting a carcass ready for my Thanksgiving stock.

I've had my stock simmering for (3) hours now and just put the breast on. Still had half a basket of used coals plus an additional small chimney. Using KBB (filled the basket to the top with fresh before dumping the chimney) and a nice chunk of oak. I am cooking at 305 degrees right now... hopefully the temp recovers close to 325, we'll see. Running wide open.

Well you better make a batch of these to go with that turkey. Its the only way we make stuffing anymore. If you don't have silicone muffin cups these bake up just fine in a lightly greased muffin tin.

 
In a large saute pan, melt butter, stir in flour, and cook for 1 minute. Slowly add in warm turkey stock 1/2 cup at a time until gravy is desired consistency. Add in spices and adjust seasoning, if necessary.

Temp held steady at 330. Once the breast got to 160 internal, I flipped the door to create a heat inducing gap. Just chasing skin texture.
