Gyros!

While my grills thaw out, this cook was done indoors. I've posted a similar cook before. Not at all "authentic" but some good grub regardless. Recipe adapted from Seriouseats.com.

Blend of lamb, beef, pork. 8oz lamb, 4oz each pork and sirloin. Half an onion, 2 cloves garlic, fresh oregano and dill, s&p. Blend in food processor. I've had this guy since about 2000.

Shape into loaf not more than 1 inch in height.

Brief sojourn into 300° oven for about 35 minutes.

Homemade pitas after 2nd rise...

Slice loaf thinly. Into broiler for about 3 minutes per side. Roll out the dough and onto the skillet. About 2 minutes per side.

Finished non traditionally. Pickled red onions, lettuce, garlic-lime-dill cream. A bit of feta. So, so good.

I think it's better with a tsaziki sauce, but I was lazy and had some leftover crema. I also prefer it with cucumber and tomato but these worked out really well.
 
That looks great, Tim!! I especially love the foil wrap for that authentic look, and that you made the pitas! :) Flatbreads like pita and tortillas are so much better made freshly! I still need to find a naan recipe I like, but I'd love to pull up to a plate of your gyros, my man!

Thanks Rich! I slightly overworked a couple of the dough balls.

I've even using thus Naan recipe, fwiw. Works well indoors, too.

 
Made two meatloafs yesterday. I was thinking it was going that way then pow. Gyros. Nice. Love gyros. Occasionally I am brave enough to eat it at restaurants around here. Always disappointed... and bloated.
