Every year a friend of mine throws a FRYday party. He sets up two turkey fryers and everyone brings something to throw in the oil. It's a truly disgusting (in a good way) display of gluttony. Wings, hush puppies, turkeys, pizza, cheese stuffed poblanos, chicken livers, funnel cake, etc. You name it, we've fried it...except for BBQ, until now.
Saw an episode of "Down home with the Neely's" where they made pulled pork egg rolls and knew what I was doing for this years party. I used Chris Lilly's Injection recipe for the pulled pork but did do the dipping sauce from the Nelly recipe. They were a HUGE hit.
Couple of 9 lbers on.
The smaller one off. The bigger one finishing up.
Minced for the egg rolls. Pulled for sammies.
The minced with my wife's cole slaw and a drizzle of Fat Johnny's Bastardized Piedmont Sauce on the wrapper.

Got to the party and started to imbibe and forgot to take the "after" pics...
First time ever making egg rolls. Once I got the hang of it it wasn't too difficult. A few things I learned. (1) They didn't travel well. When it was time to put them in the oil they had split open. I ended up re-rolling them right before they went in the oil (luckily I brought an extra pack of wrappers). (2) en egg wash to seal the edges is a must. I didn't use it when re-rolling but instead just used beer to moisten the edges...some held together others didn't. (3) The dipping sauce is phenomenal!!
