Fried Chicken & Twice-Baked Potato (no grill or smoker, just oven & dutch oven)

So I scrubbed, oiled, & salted the spuds, my last record said 45 minutes @ 450f for the 2BP, but these needed an extra 20 min, added butter, cheese, salt, sour cream, etc....my advice: if you're gonna add a bunch of cheese, skip the butter. I turned the heat down to 350F, mixed the filling, & let it go for another ~15 minutes ((((how long's a pizza take I asked myself))))

I've been buying these chicken-fried steaks, chicken-fried chicken patties, & then the garbage patties (had to try them). The good patties cost $2/each ($9.X for 5 of them), and I remembered liking the crispy fried chicken from ATK, so I did that again. I halved each breast & pounded it flat, and they were still 2x the size. I used a ton of cayenne and hot sauce in place of the paprika. IIRC, these froze & reheated very well so that's my plan (roll my own). Satisfied so far.

The fried chicken recipe from ATK is titled "Cast Iron Fried Chicken Sandwiches", last time I made them as strips.
 
Looks good Clint, ATK has some great stuff. We have the TV show cookbook and we have tried quite a few and they all have been good.
 
I have at least 7 of their cookbooks (I should probably count them), and duplicates of a few on kindle :)... (((not counting gifts :) )))
 
Clint, I'm pretty sure that's a Weber dutch oven you used there, right?!?! :) Looks very tasty, and just needs some sausage gravy to go with it! :)
