My wife freezes corn this time of year, thought would share with you all. A box of corn to be shucked and prepped
 
And the end results are in the freezer. It takes about 2 dozen ears of corn for this recipe. It was a recipe from my Aunt and my wife has done this for many years. Delicious in the winter for sure.
 
Yes, here is the recipe for it:
4 qts corn (about 24 ears)
1 qt. water
1/2 c. sugar
4 tsp. salt
Cut corn off the cob. Put all ingredients in pan. Bring to a boil. Boil for 10 mins. Stir alot. Do not pack untill cool. To cool put ice in sink and sit pan on top of ice. Makes about 7- 2 Cup size containers. Recipe can be halved.

We are headed to a local farm here in KY tomorrow to buy 4 bushels of sweet corn. We blanch in boiling water for 10 min then a ice bath for 10 min roll in aluminum foil and freeze. We did that last year and we just cooked the last of it today and it was just as goo as it was when it was fresh. I agree its nice to have some good corn on the cob during the winter months.
