First of all, THANK YOU Bryan S. After reading about 65 pages of the comments, I had to try this. This is great recipe. The only way I can describe the flavour is BBQed KFC. Will be making this more often.


4 bone in chicken thighs. Not marinated. Lid temp was 450 during preheat. Entire cook was with lid off.

Basted every 5 min.


 
don't be afraid to let it marinade. People say don't go more than several hours but I've let it sit for ~24 hours and it was even better.

Yep. I haven't gone 24, but have gone 8-12 and wished I'd gone longer. Yours looks really good. Welcome to the RSC addiction.
 
Welcome to the RSC club Matthew! Barb and I are doing RSC tonight, truly great chicken. I marinate mine about eight hours but I may step out of the box and go longer after reading some of the comments here. I always do it on the WSM without the water pan and high heat. The more you baste it the better it gets.
