First Pork Butt On My Mini WSM

Hi all,

I just got finished building my Mini WSM the other day. I did a dry run on it and it held temps well for 5+ hours. Next weekend I'm thinking of doing my first pork butt for pulled pork on the mini. Looking at getting a 5 lb butt so I have roughly 3 lbs when all is said and done. How long should I be smoking it for? I've read everywhere from 1 hr per pound to 7 hrs total, etc. How much wood is good for a 5 lb butt? I plan on using hickory chunks along with the Minion method. Any info, tips or tricks would be greatly appreciated, looking forward to breaking her in!

Cute little WSM. I smoke a 5 lb pork butt based upon internal temperature. But I would figure 5 lbs would probably mean about 5-7 hours if your WSM is running at around 225 deg. If your WSM is brand new, it may run a little hot at first, so this time could decrease. I add about 3-4 chunks of wood to my minion pile, or a handfull of soaked wood chips, depending on which I'm using.

I've done several pork butts on my Mini (a GREAT little smoker) but they have been all 8.0-9.0 lbs. They took a bit over 1.0 per lb. at a temp of 275 degrees. I use Harry Soo's recipe and get rave reviews...

I use three or four pieces of apple on the top of the unlit coals. I use the tin can Minion Method with all of my smokers. I use 8-10 lit coals in the Mini. I put the meat on when the temperature hits 200 degrees. I often do two butts at once (they don't really increase the time all that much).

Will be doing an 8lb butt today on my mini. Using apple and pecan for smoke at 250-275. Will wrap with aj, asv and brown sugar at 165, when it hits 195 I'll start doing the probe test for tenderness and disregard the temps. When it's done it's done. Guessing about 8-9 hours.
 
Thanks for the replies guys! I think I'm gonna go with a modified version of Harry Soo's recipe (no injection) I'll be sure to post back with pics!
 
I use the tin can minion method and my little Mini can hold 225-250 for 14 hours or so on one load of fuel. These little things are awesome
