So I was able to do my first PSB after the MIL debacle. Unfortunately I'm sick and can't fully appreciate the taste and smell of it since both senses are dead. My wife says she can't taste the smoke, but she's sick as well so I can't go by what she says. I'll just have to try again when we're not sick lol

Set up for tin can minion with old and new briquettes and mixed apple wood and mesquite

5 hours later it reached 165F. It was probably sooner but my digital thermometer broke and I had to use a semi instant read probe.

Pulled and sauce reduced. Probably could've been reduced more but everyone was hungry

Total time took almost 8 hours. No plated picks cause they were gone as soon as it hit the plate lol

Your "illness" didn't have anything to do with that JD tin in front of your very able helper - did it?? :)

Thanks everyone! I don't know if my senses are coming back or if the day after marinate made a difference, but I had some of the leftovers for dinner tonight and it was so much more tasty! And I didn't notice that it had a lil bit of kick to it when I ate it the first time. I didn't even put jalapenos cause my wife and kid don't like spicy. Must've been all the pepper. Oh well, more for me!

Next on the agenda, a fatty!
