First Cook on my Performer

This is my first cook on my Performer. I like to smoke chicken, but this time I decided to go with a simple, straight-forward, grilling method. No wood, no smoke tubes. Just charcoal.

I used a homemade citrus-based marinade, and nothing else. It was served over baby arugula with a strawberry-orange-dijon dressing. The chicken was cooked to an IT of 155, as I always cook it, and it came out amazing!

Nothing like a Weber!

Well it does look darn good! I’d be up for the recipe if ya don’t mind!

I keep trying to get the kids to eat the char. “But it’s burnt!” No no, that’s the added flavor.

Is this a brand new Performer or a rescued one?
 
Marinade
  1. Olive oil - 3/4 - 1 cup
  2. Kosher salt - tsp
  3. Pepper - to taste
  4. OJ - 1 1/2 cups
  5. Paprika - tbsp
  6. Oregano leaves - 4-6
  7. Zest and juice of 2 large lemons

I usually marinate overnight, but 6-8 hours would suffice.

Nicely done! Sometimes just coal is exactly what you want, often in fact but, when you want just a light kiss of smoke,
I’ve adopted the Harry Soo technique of putting the smoke media under the coal. You will get a bit of flare at first but, get the lid on and it stops and the flavor is there!
