First Brisket

I picked up a brisket from dog meat section, I had not done before I was shooting for 275 slow cook on the Kettle. I planned and taking it to 165-170 then wrap in foil and take it to 195. The cook went well here are pics

This was couple hours in




Then wrapped it at 170



Pulled it at 196

 
That is a beauty! Beautiful smoke ring, looks juicy and some great bark. Nicely done!!!
