Fired up the "Chicken Machine"

At least that’s what Nancy calls it. It’s our 22 with the Cajun Bandit rotisserie kit.

She found a recipe for Peruvian roast Chicken so we decided to give it a try. Basically this is a rub consisting of white wine, canola oil, white vinegar mixed with large amounts of paprika, cumin, garlic powder and pepper.

While the chicken was going, Nancy made some stuffed peppers and I did some Yukons with EVOO, pepper and garlic salt. I made a side dip for this of Mayo, parsley, garlic, chives and Dijon mustard.

After dinner it cooled off so I I enjoyed a little fire with a class of Cream Sherry.

Try it now Scott. Sorry folks, I thought they were there for the viewing. Please let me know if this continues to be a problem. Now excuse me, the ribs need tending too. :)

That is one fine souped up kettle. food looks good too. Give your dog a pet for me, I do miss my Goldie. )))):::::::::::::::>> d
