Last year I got a truck load of White Oak, it was six months old when I got it, I think I've had it for six months. Brian D. said it can take two years before it will burn, so I split a couple pieces down to see if it would burn. It did :)

Got Drums & Thighs. The drums marinated Mojito Lime and the thighs in wine & herb.

Chuck that is so cool using wood in your WSM. I've got to think the chicken was better than using charcoal like I always do. It looks delicious. There is a BBQ joint not far from me that uses all wood fires and their food is so good. Great post!
 
Looks delicious, Chuck! Let me guess - it tasted great too, right? You know, you might have to consider doing chicken cooks to turn around those Gigantes instead of sausages. :) Very enjoyable post, Chuck - thanks!
 
Outstanding job on the cook Chuck, those drums and thighs are to die for. All wood burn seams like the way to do it. Again awesome job!;)
 
Very nice cook Chuck! That had to be tasty cooked over oak. Can't say I'm sorry the Giant's lost, at least the Dbacks are 7-6 now.
