Finally some decent BBQ Pork Chops

I all but gave up making decent BBQ Pork Chops. Decided to give it another try, this time on the SmokeFire. Set the grill to 350 and cooked these 1" for 10 minutes each side. Came out good if I don't say so myself

I thought I was the only destroyer of pork chops. I gave up about a year ago. Every time no matter what I did I destroyed them. Tuff and dry as particle board.
Those look good! I'll give your method a try for sure.

My two "musts" for pork chops? Thick cut (thicker is better), and sous vide (2-3 hours @139°, then 1 minute sear/side on grill or CI.) No more dry chops! Oh, and if I have time and/or remember, then I brine them. :)
