Hello all! I have been around for quite a while, posting when I can or when I make something I feel is post worthy. I recently made my first brisket which was on my long list of things to try, but the one thing that was really bugging me was that I had never made homemade bacon.
I picked up a 7 pound pork belly and cured it with tender quick for about 8 days. After rinsing and resting overnight I smoked it for 5 hours over apple wood at about 185 degree.

I recently picked up a slicer and figured this was the best way to test it out. I'd love to say that this much bacon will last a very long time, but as good as this stuff is, I might need to get started on a second batch today!

The results were nothing short of amazing! Thanks to Bob Correll and his Bacon made easy thread.
