I fired up the WSM with some KBB and 3 chunks of Post Oak from Fruita Wood. I had a bunch of really good used charcoal.
Let it ride around 230 for the whole cook.
Stuffed peppers. They are mostly sausage. My butcher makes these. I think its sausage, cream cheese, bacon and jalapeno.
Made a fatty with the sausage, a ton of cream cheese, shredded chedder. The cream cheese was season with ranch seasoning and we put some
Holy Cow on it.
Final product. The fruita wood really put a nice smoked flavor on.
Almost too much, but fatties always soak up the smoke.
