So my kids took me out for a great lunch, I promised a good smoked rib dinner this evening, no sides, just beer and ribs. The pressure was on LOL.
So got the WSM started with Stubbs and some apple and hickory around 10am, had my three racks dressed and rubbed last night with Worcestershire and Texas Rub Grand Champion. On the smoke at 11am


Have I told you fellows how much I am liking this WSM, though the wind picked up here and I did get up to 280 for awhile, repositioning the top vent and cutting down the vents to two closed and one to 1/3 opposite the wind. Finally got back to 250 at the grate

Finally got to use my bottom grate, all meat cooked about the same, two racks needed to be in for another 25 minutes before they said they were tender and ready, here they are at 3pm and after a quick mop of Willy's Home Made.

Foiled one rack and in the cooler for about half an hour waiting for the two stragglers. My Brother decided to show up with his three sons unexpectedly, thank God I had the third rack on, was originally going to have that for a lunch during the week. Oh well, family you know. Not a speck of meat left on the platter.
Came out perfect, a lot of happy faces.
