My wife doesn't like corn beef or cabbage.
So I made baby backs instead.
Rubbed with Grill Mates Applewood Rub, rolled cause I didn't know yet if I would need more room for something else, and smoked with pecan wood.

While those are cooking, here's a pic of some $3.39/lb chuck eyes I found yesterday.

By now, snow had changed to rain, and the rain had changed to freezing rain.

About 3 hrs. in, I unrolled them and placed in foil with a little Dr Pepper for about 45 minutes.
One hand was holding the umbrella when they got sauced, so I skipped that shot.

Bite off the bone tender, and very tasty.

I started with one char-basket of Trader Joe's, and refilled it 2 more time during the about 4 hour cook.
Bottom vents half closed at the start, then open full.

yesterday, i saw one chuck eye steak labeled, packaged and priced as rib eye: $10.99lb. at PNS...
pretty ignorant meat cutters there, i've seen this before, a few times.
Local members, avoid PNS on Ryan Road at the interstate in Oak Creek WI
i brought this to an employee of the meat department and he simply said, "Oh,... I guess we mis-marked it."
He then PUT IT BACK WHERE I FOUND IT! Un******' REAL!

Anyway, GREAT RIBS BOBBY!!! waiting for REAL corn!
 
Mr Correll since I moved to Arkansas about a year ago I have not really been homesick until I saw your Shop-n-Save meat pictures. There are no good grocery stores down here, I have to choose from Wal-Mart, Aldi's, , and Price Cutter. The last two are a just like an IGA with a worse meat department. Oh how I miss Shnucks, Dierbergs, and Shop-n-Save. And I really miss sitting in the bleachers with an overpriced ballpark beer!
 
You have a steady hand, Bob: umbrella in one and camera in the other! Nice juggling. Really nice looking ribs.
