Enchiladas and other goodies!

Yesterday was a busy cooking day..today not so much..we had a family dinner planned today of enchiladas and my wife asked me to make the meat ...so last nite I started a chuck roast dusted with onion,
Garlic and cumin..few other odds and ends..some boneless chicken thighs in a simple poultry rub and fired up the WSM and added some hickory!




So while I was watching the smoker do it's thing!! Reverse door for higher heat!

Some friends called and decided to come over for dinner and drinks..we did up some road side chicken wings and mini buffalo burgers!



Not much of a cook but here it is plated!!

As the party went on so did the meat on the WSM!

I guess the thighs were on for about 2 hours and the Chuckie stayed on for about 6 hours total! After a couple hours the chuck took a steam with a ESB Alaskan and a couple cans of Ro-Tel(chilli's and tomato)

I had been wanting to try this modified PSB for tamales but I figured enchiladas would work too!
My wife made up a couple pans of this!

And was plated up like this!!

Couple good meals..the enchiladas were excellent!! Good stuff!! I really dug the chuck done up like this!

Morgan I've made enchiladas using pulled pork and they came out great, but that PSB style pot roast you used sounds really good so I'm just going to steal that idea and try making some.:)
