Dutch Oven Jambalaya and Skillet Cornbread

These are a couple of recipes I've done for a few years. They are both Weber recipes and go well together. Dutch Oven Jambalaya and Cornbread, both done on the grill. Did the Jambalaya on my 26er and the Cornbread on my 22. Here's some pics.

Grilled up some corn and red bell pepper for the cornbread.



Cut cooked corn off cob, chopped roasted pepper and jalapeno (including seeds).



Whisked dry ingredients together. Cornmeal, flour, sugar, baking powder, baking soda, K Salt.


Same with wet ingredients, eggs, milk, jalapeno, red bell.



Mixed dry and wet and put in buttered 10" CI Frying Pan.



Oh yeah, had a few of these.


On the grill, indirect for about 25 minutes.



All done, toothpick clean.


Yes, there's a cooling rack under the pan.



Now for the Jambalaya. Peeled one pound of medium sized shrimp.

Some of the other ingredients. That's two cups of white rice at the top. About a pound of linguica, smoked chopped ham, yellow onion, red bell pepper, diced celery and some chopped garlic.



Cooking the onion, bell pepper and celery in some oil for about 5 minutes.



All done.



Adding the linguica.



Couple of minutes and then adding the ham.



Finally adding the shrimp and cooked for about 10 minutes.



All done, about 30 minutes.



Plated with the cornbread.



Well, that's our New Years dinner. Both the cornbread and the Jambalaya came out great. I wanted to put a little more liquid in the Jambalaya at the end but I was afraid it might mess up the cooking shrimp which was added at the very end. Turned out it didn't need it. It was juicy and had tremendous flavors. Hope you all are having a wonderful New Year! Thanks for looking.

Wow. That's a great looking meal. I wouldn't know where to start with the cornbread, but thanks for making that jambalaya look "doable".

Thats some tasty eats and then you add the cornbread, i'm in.
 
Thank you all for the very nice comments. Several of you asked for the recipes. The Jambalaya recipe is in Weber's "The Art of Cooking with Live Fire". It's one of their older books. The Skillet Cornbread recipe is in Weber's "On the Grill" App. If you don't have the book or the app, I found links on line to both recipes. Hope this helps.
