Dinner request

My lovely wife is going to PA for a week on business and requested we have dinner at home and wanted carne asada. Here is what we did...

Seasoned with Lawrys salt and let it sit for 15 min. Then added Chef Merito.


We made her salsa..


Using the same CI with the same oil did some refried beans.




Cooking directly on coals hot and fast.


This did not take long..






Plated with some chopped avocado and mayo for the beans.

Awesome looking meal as usual Tony....Can we all come and eat dinner there during the week....LOL

On a side note....How much charcoal do you go through in a yr with all these grill cooks?

I don't think we use much... Maybe 30 lbs a week.

Yes sir chicken for us!!!
Today I told my son who is 6 he will be cooking for us in his Mini WSM. He is pretty excited.
 
Looks awesome Tony! Went to my local Mexican market last weekend to get some Flank and Skirt for some taco's, turned out disastrous! Meat was like rubber, real tough no matter what doneness it was. They had it marinaded and non-marinaded. I got the marinaded. My neighbor goes and gets 200lbs for our big block party every year and it's awesome! From the bag straight to the fire. What do suggest I ask for?

I think they gave you something called diesmillo and they just put carne asada. Ask for "ranchera" or "arracherra " in our area it cost 5.99 pound and the others stuff diesmillo or chuck will be 3.99. Or give me their number and I will call for you and ask what they have..
