I got no pictures...so...

Smoked 10 Johnsonville Original Brats with a little Hickory, and split a 2 lb. chub of Bologna lengthwise, rubbed one half with Blues Hog, the other was painted with CYM and sprinkled with Dark Brown Sugar.

It is to die for...
2 half slices of bologna on white bread, with a little CYM and some Blues Hog Original....You'll slap yo' mammy if'n she get in th' way!!!
Brats on a Hogie bun with Jack Daniels Hickory Smoke Mustard...Get Outta Town!!!

250° for about 1.5 hrs, or 170° internal on the brats, 140° on the bologna.

Brats are great in the WSM. Got this inspiration at the Cowgirl Grill in Santa Fe:

Smoke some brats
Heat up a bag of sauerkraut with shredded carrot and a tsp or 2 of cinnamon
Wrap in a flour tortilla with your favorite mustard
Cold beer

Awesome.
