I furloughed myself on Friday for a little R&R. Started the day by bottling 6 gallons of a cab/merlot/Syrah blend. It had been soaking on some oak cubes and I decided to set them aside and use them in the WSM. Now I just needed to decide what I was going to cook. While I was thinking about that, I remembered I had some aging lobster meat in the freezer. I didn't want that to get freezer burn, so I made some lobster rolls for lunch:
I decided (with my wife's help) that we would have chicken tacos for dinner, so I got to work. I made a paste/marinade using lime zest and juice, orange zest and juice, olive oil, garlic, salt/pepper, cilantro, oregano, Aleppo chili powder and cumin. It looked like this:
Next, I had to get it on the bird:
I threw the bird in an oven bag in the fridge for a few hours. While I waited, I made a grapefruit/strawberry/rose sangria. Thank you, Bobby Flay for another great recipe:

Got the WSM lit and threw the bird on. iGrill on and ready to go:
Two hours later, she was ready:
I pulled/chopped the meat:
Finally got around to assembling some tacos and eating. Mine had pickled red onions and radish. A little quest fresco or sour cream sauce would have been perfect, but I didn't have any. Corn was slathered with a chili-lime-cilantro butter.
