The reason I chose them is because they seem to seal the ends better, and I thought that they would better to keep water out. Am I thinking this wrong.

Well, they're not a watertight seal and water will get in. It could be a double edged sword and prevent water from draining back out too.
 
Samuel, I bought the square style by mistake once.

Another issue with the square type is they add length to the tube. I ground a little off of each side so they fit flush inside the tube, vs being on the outside on the end. It was easy , took about a minute per connector to grind them down so they fit inside the tube.

Semi interesting story about that style of connector. When I got that Jack Daniels grill from the buddy that worked for Weber he gave me a box of miscellaneous stuff that included new zbars and various styles of tubing connectors. I asked him why he had some of the square type connectors mixed in. He told me that Weber had actually experimented with using that style of connector on their grills but decided against using them in production for whatever reason.I thought it was interesting anyway.
 
I think I would go with removing the plastic. Besides, it's been on there long enough to where it might not easily be removed.
Well, I decided to give it a shot. This is their beginning state:

Used a hair dryer and wore a glove to peel off the plastic wrap in pieces. It was not fun.

Once I got the bulk of it off, I sprayed Goo Gone over them in a plastic tub to remove the Glue, let it sit for about an hour, then used a blue sponge to lightly scrub them with the Goo Gone.

Finished with washing them with Dawn dish soap and a new blue sponge, then Bar Keeper’s Friend. It worked!

Yeah, I had a feeling it was going to be a pain. They look great now though.
