I was in a salmon kind of mood tonight, so the wife picked up a nice skin-on filet. Here are some pics of the cook as it progressed...
After scaling the fish, I used a technique I learned from chef Thomas Keller's French Laundry Cookbook, where you "squeegee" the skin with the blade of a sharp knife, which helps to achieve crispy skin by removing excess moisture (as shown by the photos of the knife edge covered in dark gray salmon goo)...

The salmon all portioned and ready for seasoning...

Seasoned with some Jack's Old South hickory rub...

Action shot of the salmon cooking on the Spirit S320 gasser...

As a side dish, tossed some mushrooms in a vinaigrette made of dijon mustard, balsamic vinegar, and olive oil, then grilled...

Final plated pic. Now considering that the title of my thread is "crispy skin salmon", one would naturally expect to see photos of the crispy skin. Unfortunately the salmon skin curled a little too much while grilling, and I didn't consider the skin side to be photo worthy, so you'll just have to take my word for it that the skin was indeed crispy
