Decided to do some chicken this time. Used a recipe I've been keeping my eye on for a while. Crispy Chicken Thighs with Basil and Prosciutto Butter. Also had some nice white rice along with some fresh zucchini grilled with a sweet onion. To top things off, I grilled up a few peach slices for something sweet.
I got to work on the butter mixture. When mixed, this butter is placed between the skin and the meat of the thighs and spread evenly over the entire piece. Here are the ingredients. 1/2 stick unsalted butter, some prosciutto, finely chopped, minced shallot, finely chopped basil leaves, grated Parmigiano-Reggiano, and some k salt and pepper.

Here is the butter mixture ready for the chicken.

The chicken is ready to go. I've spread the butter mixture evenly under the skin of the thighs.

Got the zucchini and the sweet onion ready, coated with a little OO.

Have the chicken going on indirect, skin up, for about 18 minutes or so.

Got the zucchini and onions going over a medium direct heat.

Chicken is moved over to direct medium high heat, skin side down for about 2-3 minutes.

Threw on the peaches.

Chicken is done. One of the pieces got a little darker than I like, but it was OK.
