Couple of fat chicks

Picked up a couple of chunkins last weekend and cooked them up a couple of days ago. Spatchcocked them and marinaded in Stubbs Chicken marinade for about 8 hours. One got a rub with Galena St. the other, Arizona Dreaming.

Fired up the performer with Kblue.

Birds on indirect. I wished I had used the WSM, jamming the two chunkins on half the performer was a squeeze.

Sat down to have a cocktail (Mount Gay rum and Tonic w/ Lime), realized I forgot the smoke wood. Tossed in a chunk of Apple wood.

Got a visit by this guy, red breasted grosbeak.

It was gooood.

The yardbird looks great but how can you trust a WHITE Thermapen?

Everybody knows you gotta have a RED one....

You knocked that one out of the red breasted grosbeak park fat Eddy! Love the sides too!

Great meal and post! I've seen the spatchcocked kind around here, but the red breasted guy must not travel this far South.

Very nicely done. I noticed the Penzeys containers in the background. I see a lot of their products used here - good advertizing for them. Great supplier!
