Got the jumbo joe smoking peach wood, chicken thigh club Sammie’s coming up.

Just a sandwich for dinner last night.
I did have a few Wobblies but man was it good.
JJ again, JD obviously and 1 baby hunk of peach.
All indirect, took a long time on what I guess was medium heat.
Pics are in the light we ate in the dark.
4 thighs split in half, 2 killer hogs bbq and 2 were Oakridge jah love jerk seasoning.
That Oakridge sure does have some zing to it, it’s funny when you forget and it had a bunch on it.
The colour difference is obvious too.
Boston lettuce, bacon and 5 year old cheddar.....great quality cheese.
Mayo and black pepper.

Eating pretty good through the day is ending up in fairly basic but tasty dinners it seems. Could be the cocktails too making my appetite smaller for dinner....? Anyways last night I tried that brischuck I picked up for burgers. Made fried onion, mushroom and bacon burgers. All the same bbq and charcoal. Everything came out great, the beef however was a lot different than what I am used to from my local butcher who provides me with excellent 80/20 chuck.
Shaping the burgers even was different, if they weren’t coming out round I could just sort of move the beef to the right spot instead of making the burger from the start again........maybe it’s hard to explain, but it was like play doh would be.
Seemed like the fat content was high, even the colour of the meat is light, not a ton of red like usual. Very soft and mailable I guess. Anyways the flavour was minimal in the beef, and the spice used you can see on top of the burgers once shaped was even applied a bit too heavy which I was worried about....so hardly any flavour and actually very soft, not beefy like normal...the burgers were still good enough to eat but if this beef was going to be better it may just need a lot more time right over top of a slightly cooler fire.
Tonight is lined up to be picanha roast and red beans and rice....this is something we have done a few times and usually comes out great with the beef being very rare, we will see soon!

They were calling for 5 days of rain for our 7 days here.
Last night there was a storm starting after 11 with the light show and everything. It was a good one.
So......no rain during any day yet, we couldn’t ask for better weather...usually about 23 degrees and sunny which makes it feel warmer. 23 is about 78 or so for you folks south of the boarder. Probably like an 85 with the sun on you.
It’s beautiful this morning too.

Looks beautiful. Sometime around fall of '95 I spent a few weeks in Kingston for work. It was really nice fall weather.

No problem man, I am relaxing and having extra time and don’t mind posting if people are looking.
Played a round of golf yesterday with the MRS. Didn’t shoot so well but it was fun, and we are going again tomorrow morning.
Just primed up the picanha roast and have it sitting waiting to go on.
Going to get out the temp probes finally and try for a nice low smoke of 225 to 250 if I can keep the jumbo steady.
I have peach wood for smoke.
The roast is very well marbled.
Rice has now been pre cooked, I try for a bit of crisp while the red beans are cooking.
Gonna be a good time tonight, going outside now for cocktails and some bocce ball and some tunes.
Maybe pics tonight but for sure in the morning.

Kingston is about 1.25 hours to the east of me right now. The leaves haven’t really started to change yet but compared to summmer weather it’s a bit Cooler. They are calling for hot weather Friday and Saturday here, like 30C. Which is around 92 - 96 for you guys.
 
Man I need a vacation too. Anybody want to baby sit a couple kids!
I’m going to ship my boys to Micheal Richard’s house for the week, they’ll bring a WSM 22 for your troubles.

I’m glad you’re having a super swell vacation this week as I hold down the office and put in record hours. Haven’t had to work this hard in a while. I’ll rub in my vacation, should it happen, come late November. And I won’t be cooking a dang thing. Someone else will cater each and every request I make 🤩
 
Dinner turned out tasty again, beef came out just slightly warmer than anticipated but pretty close.
Lots of left overs, looks like beef on a bun in the near future. Made horsy sauce to go with the beef and for the buns later.
