Cornish Hens and Red Pepper and Asparagus Pasta

Been wanting to do these since I had them at The Cozy Corner in Memphis. Came out pretty tasty. First pics in a while

The pasta is a side we have alot. We make it with a variety of veggies and pastas, I started by blanching the asparagus in salted water for a minute or so and then cooled it. I then sautéed the onions and red peppers along with some fresh garlic and red pepper flakes in olive oil. As this was cooking I added the spaghetti to the asparagus water. I then tossed the asparagus in the sauté pan. Once the pasta was al dente I combined it all together and seasoned with salt and pepper.

As far s cooking pics I have a couple but the hens were cooked on my pellet cooker. I have been playing with it alot lately.
 
Nice looking birds and pasta, indeed! The first time I cooked game hens on the grill, I fell in love with them. My mother used to cook them around Christmas (didn't want to do another turkey after Thanksgiving), and I thought they were good, but not great. Then, I cooked my own, but brined them first and then stuffed a mushroom mix under the skin before cooking. I halved them and cooked them direct/indirect with a bit of apple wood smoke, and they were delicious!

I especially love the look of that pasta; I'll definitely try that recipe the next time I do poultry, even if it's not game birds.
