Corned Beef & Cabbage and Irish Soda Bread

Did my Corned Beef and Cabbage Dinner last night along with a loaf of Irish Soda Bread, cooked in my 22 in. WSM.

Got going on the bread earlier in the day. Whisked up the dry ingredients. Flour, sugar, baking powder, baking soda and some salt.



A few "wet" ingredients.



Put them together and cut in the butter with a pastry blender. This was work! After I got the consistency I wanted I added in one cup of buttermilk and two cups of raisins. Forgot to show them in the pic. Sorry.



Formed into a ball and placed in my well greased CI Pan.



On my WSM for one hour @ 375.



All done. To the cooling rack.



Veggies for my Corned Beef.



Some potatoes too.



Nice 4.4 lb. flat from Nathan's.



Placed in a HD Foil Pan on top of the veggies. Rubbed in spice packet.

Added two large cans of San Marzano Style Tomatoes, cutting into chunks. Added water too.



Covered tightly with foil and placed indirect on my 26 in. kettle.



Prepped one head of cabbage.



After cooking about 3 hours, added the potatoes and cabbage and re-foiled. Cooked one more hour.



All done.



Plated.



Some Irish Soda Bread.



Everything came out delicious. The potatoes didn't get quite done as I'm still learning the dynamics of indirect cooking on my 26er. Aside from that, a nice meal. Thanks for looking.

Looks really good!! I have never seen it cooked in tomatoes before, how is it like that?

The corned beef comes out great, cooked this way. I've been using this recipe for 10 years now. The CB is flavorful, moist and delicious. Actually the veggies pick up the flavor of the meat too.
