Cold Weather Chillin' while Grillin'

ain't complainin'... it's winter in Wisconsin, it's gonna be cold.
butt i'm hungry, an' i'm gonna eet. A lot!
so... two big ol' pork steaks bought fresh today from my favourite pork house

used all this stuff for seasoning the pigcuts

oh, an' this was the outside grill-time temp... that's 5point4 degrees Fahrenheit :p

after gettin' the 26"OTG fueled up an' ready for action, the pork hit the grates

'bout 80 minutes on the Weber at about a dome temp of 320ºF... apple & hickory wood for smoke

served up with Crash Hot Red Potatoes and oven roasted Brussel sprouts

tender & delicious these pork steaks were... if i could copy this cook everytime, i'd be a very happy man forever!

Jim those pork steaks look delicious. Your a real man to cook in those temps, it gets here in the low 50s and I'm thinking twice to go out side.
 
I've done pork steaks a few times now, some good and some ok. I think the ok one wasn't cooked enough. When do you pull yours, internal temp or feel?
 
Looks super! Really need to cook up some sprouts soon...Way to long since i had some. That plate is money!
 
Now there's a perfect plate for cold weather. Pork steaks b'sprouts and crashers. Power to ya Jim. I'm outside briefly tomorrow to grill some chicken. See you there.

John, internal temp cooking as long as they are at 250 or so does not really matter, cooking low & slow i remove the steaks by tenderness. Actually, polk a fork in the meat and twist... pretty easy? then remove.
Or, you can lift one end and if the other end is limp, time to eet
