Cold Rainy Night for Pork Chops

Finally got a little rain last night. That put us up to a whopping 11 inches for the season. We're hoping for more, soon. We were in Costco earlier this week and we spotted these lovely pork loin chops for 1.79/lb. There were nine in our pack ranging from 3/4 to 1 inch thick. Couldn't resist. Here's the pic's.

Put them in a marinade for about 4 hours. Water, soy sauce, oil, lemon pepper seasoning and minced garlic.

Marinated the veggies also. Squash, zucchini and yellow, minced garlic, fresh chopped garlic, crushed red pepper flakes, fresh chopped oregano, juice and zest of three lemons, red wine vinegar and EVOO.

Used Bob's idea for roasting the potatoes directly on the hot coals.

Chops and veggies done marinating and skewered the veggies.

Grilled a couple of red onions until soft to include with the squash.

In spite of the weather and getting a little wet, this was a fun cook. I got a little sloppy with the pork chops and let mine get a little too done for my taste but delicious just the same. My wife's came out fine. Wonderful flavor on both. Veggies were excellent and Bob's technique for roasting the potatoes worked out very well. Have a good weekend everyone and thanks for looking!

That's fine plate of food. I wish I could BBQ Pork Chops over charcoal. I just can't do chops over charcoal. Excellent cook Cliff
 
You sure know how to put on a feed. The plate looks delicious. Chops look super and the squash & red onion is beautiful.
 
The grill master at it again. That's one super good looking meal Cliff love the onion and veggie combination.
