Barb and I don’t do a lot of Mexican cooks but we tried a couple of new ones for us.
For breakfast I made some huevos rancheros and for dinner I made up a citrus marinade for some thinly sliced beef round to use in some crispy tacos.
Both came out really good.

Good looking food! Have they imposed the charcoal burning ban yet?

Not yet, their into stage two which is for the national forest. That bans charcoal and fires in the campgrounds and the use of weed eaters, chain saws and torches anywhere in the forest and target shooting. I'm really surprised they haven't banned all charcoal because it is bone dry, no rain for many months now and the humidity is below 10%.
 
Looks good Rich. They ban target shooting too. That would save me some money.

One of the biggest fires we had a year or so ago was caused by a bullet hitting a rock and started a grass fire which soon turned into a thousand acre forest fire.
Yeah it saves me a lot of money too.
 
Way to celebrate Cinco de Mayo. What could be better than a Mexican meal? Two in one day!!! Both look super.
