Chuck Eye Carne Asada

TVWBB Olympian
I got another cookbook last week and just got a chance to cook something out of it.

Someone here recommended "La cocina de la frontera" years ago and it's how I finally "perfected" my Mexican rice several months ago. Anyway, El Norte came and everything just sounds good in it.... sauces, drinks, meats, etc, and it's especially suited for this forum I think.

I was reading some beans recipes (made a simple imitation of Tony's for lunch today) and one said it was a standard side for most al Carbon recipes, so I had to flip to that section, and it made me want to try cooking with mesquite again...haven't had any of that for a while now.

So someone went to get some flank steak but the price had risen from $5.49/lb to $6.99, but they had Chuck eye steaks for $5.99 so that's what we used. I've seen people here really talk it up but I hadn't found it yet.... I think it might be my new favorite cut! Tender.... can't speak so much for the flavor because I've only tried it with this marinade, but it seems really good so far.

Since I was all worked up for mesquite and didn't have any, I went heavy with pecan chips and I'll be darned if it didn't have that mesquite flavor!

Did I say "tender"?

These were just canned beans (2 cans, with 50% of the liquid) with a little cumin & some chipotle sauce mixed in. the rice tastes better than it looks here :)

That's what I'm talking about, pass me one of those plates :)
Good to see ya Clint. How's the back?

OT: I'm almost better - been working out (last hint of pain was ~2-3 weeks ago), dirt biking (trail), mtn biked last night, even hopped on a skateboard for a minute. I don't dare fall yet but I think I'd be ok unless it was big.

That injury really messed with me - especially my mind. I kept working but getting sidelined was not good for me. My physical conditioning took a big hit.... I was always able to walk (but not sit!), I went hiking early on but was afraid to fall.. 2 months later even though I tried to stay active, my cardio hit a wall (hikes mainly - a little afraid of the road bicycle).

I've been playing a ton of chess, and I'm trying to get motivated again and back on my projects..... as hard as it was to slow down, it's as hard to get moving!

That looks fantastic Clint, I'd love a plate of that.

Glad to hear you're getting better and not taking any chances.

OT: I'm taking chances :)

took a friend up AF canyon a couple weeks ago, he was on a 1974 yamaha 250 - should've got a pic - he's the one who was with me the last 2 times I got hurt....8/6/15 on his halfpipe----afterwards anyway, & then @ the park @ Brighton on 3/2/16. I usually have confidence that I can make it up almost anything, but I was having trouble maintaining momentum...and I wasn't entirely sure of his or his bikes abilities. He did better than I did :)

I went a couple/few weeks earlier but forgot to air up my tires, forgot my moto pants (kevlar & heavy fabric), and thought I might've heard a little extra engine noise (fear of grenading a piston in the backcountry) so I didn't dare go too far in.

I'm so fat now I float in the pool :)

Is that a 90's CR500? I had a mid 80's CR500, it was great for climbing, but I hated coming back down. Brakes were sketchy and 2-strokes have no motor slowing. You'd end up coming down at break neck speed, it's a wonder I never did break my neck on that beast. I got rid of it the minute my son showed any interest in it. I lose plenty of sleep when he's on his CRF450

99 CR250R, I'd like a 500! I like it best with a fresh piston - wheelies at will..... starts first kick usually. Have a friend with a KX500 (I'd take one of them too). Friend I was up with had a CR500, and then got a 97 CR250 (same as mine but stiffer frame).

I have friends & family with the newest KTMs (450, 350), but I pretty much prefer mine! A few years ago a friend got & rebuilt a 2006 CRF250 with electric & kick start....I told him it wouldn't be powerful enough etc, but I drove him up for the test drive, rode it, & gave it the thumbs up! I liked the suspension on that bike more than anything.

I thought about going to the track just 'cause it's closer & people there, but decided against that :).

Brakes fade (disappear) on this too - I need to bleed them still lol.... I always forget that until I'm up there & I'm like "did I need to bleed them on this bike or that" ---- the answer is both

The carne asada looks great! Might have to check out those books - although I've sworn off cook books.

I too have a twitchy right wrist - it's hard to behave on the street.

If you like Mexican food----- can't go wrong here.

Not sure what it is, but the El Norte was just fun to read right from the start, maybe because it seems quick easy & good. I haven't looked at the other much for a few months, not sure which I'd recommend first.....
