Christmas Party Ribs

So, my CEO's side of the family was having an early Christmas party as some of the family was going to be traveling over the holidays. It was requested i do some of my smoked ribs for an addition to the meal which is always excellent.
Took a look at the WSM last night, going to be interesting

Got the ribs dressed and trimmed, one rack with Rufus Teague and two with Three Little Pigs Cherry, going to sit in the fridge over night

Shoveled my way in and got her up and running with apple wood buried under the coals

Ribs were done 3-2-1 and came out nice, sorry no other prep pics as I was shoveling my home out today, for four hours. 8 inches of sleet topped snow and wet underneath is tough on you.
Anyhow the table in one room, another one in the kitchen area

It was a good night, the ribs were a major hit and disappeared quick, hope your weekend was as nice as mine

Awesome spread there Bill and it looks like everyone was enjoying themselves. Sleet topped snow is the worst. Be careful there!!

Bill...seriously...you're posting too many pictures of extraordinary cooks and none of us can keep up with you! As for the muscle aches from shoveling heavy wet snow, I think you should ease the pain with some of that single malt Irish whiskey you recommended to me yesterday.
 
Well done Bill..wish we would have gotten a better look at those ribs..I hear ya about that wet snow..I gave in on Friday and hired a snow plow driver..way worth the 20 bucks!!
