Chipotle rubbed rib eye on a Jumbo Joe

Hi Folks

after a couple of weeks of 30c temps here in the UK - we finally got some rain Saturday to clear the air and freshen things up
never stops me of course - just have to change the plan of attack

the OTP stayed under cover


and Jumbo Joe was brought into action on our front step just out of the rain (those are logs for burning - not smoking!)



here's the main ingredient - a 2 inch slab of ribeye rubbed with fresh rosemary and some chipotle paste



went for a straight sear - 2 mins, rotate 90deg, 2min - then flip and repeat - then off to the side for about 5 minutes to come to temp...



served medium and juicy just how we like it...



with a fruity little Beaujolais from across the channel...very nice




and to top it all off - found out I'd been included in an article on the Weber UK webpage

ha ha - yes strange that we use C not F for the temp - but I still called it a 2 inch thick steak...(who wants to order meat in centimetres?)
 
For the Jumbo Joe the charcoal baskets are too deep and the grill rests on them.
So I improvise with a foil tray - bottom removed :)

You may get a higher heat if you want with out the pan. I maybe wrong but just a friendly suggestion. :)
 
Nice Chris! That would be the thickest rib eye I'd have eaten to date. Love it. What were you doing in the North Sea? Fishing I hope!
