Chipotle Chicken Burritos

Grilled some split chicken breasts and then set them aside to cool, only took two pics and the other pic was blurrier.


Roasted a half a package of frozen corn, added a diced half large onion, chicken bouillon,and a small green pepper


added a can of drained black beans, 2TBS chipotle peppers in adobo sauce that was pureed in a blender, 2.5 cups water and one cup rice. Took two of the breasts, removed the bones, chopped them up and added it to the pot.

Cooked indirect until the rice was cooked


Warmed a burrito sized tortilla added the chicken mix along with sour cream, shredded cheddar cheese and Sriracha sauce.


Rolled and ready to eat!!
 
And yet another smashing cook from our good friend from the lovely west coast. Looks good John, lunch time here, wishing I was there! :)
