Broke out the Unknown BBQ chimney grate for a couple of 1" 28 day Black Angus sirloins for dinner tonight.

Homemade Q marinde for 3 hrs.

This was the first time I have used the UnknownBBQ chimney grate, so I was a bit in unknown, (pun intended), territory. I filled the chimney half full of Weekend Warrior briqs and let rip! The grate was red hot when I put the steaks on. OMG, I had to pay attention. This was a two-beer cook and no more. One minute either side and I thought they were done. WERE THEY EVER! After a 15 min rest, this was some of the best steak I have ever tasted…period! A lovely crispy char on each side, super moist & succulent on the inside. I'll do this again.

Excellent looking steak Tony. I have not yet heard about the Unknown BBQ Chimney Grate-I may have to get me one of those!
 
Very ingenious, Tony. I was hoping to see someone do this soon. Good lookin' steak too.

Man, at the stuff I could have burned out years ago. Wish I had access to that CNC plasma again.

A word of warning - someone in the UK tried this with the Gourmet BBQ System sear grate insert - and it cracked/broke...
Maybe it was just a manufacturing fault?
 
Chris. I believe the Gourmet BBQ grate insert is cast-iron. Getting cast red-hot and putting on cold meat can cause thermal shock. Also if there is any flaw in the grate, high heat can cause cracking.

The Unkownbbq chimney grate is made from 11 gauge stainless steel. On hindsight, I think I put too many coals in there in the first place. A 1/3 full chimney may be better.

If Ubbq made a similar grate for the SJ or JJ I would be all over it. It is a well made product.
 
Tony those steaks look like what you would get in a fine restaurant. Very nice. And I agree with Chuck, your courtyard area is really cool. I too would like to see more pics.
 
Agreed too Chris. Those two companies do produce some high quality Q stuff. I have had a response from Ubbq regarding a SS grill grate, (similar to the chimney grate), for the SJ. Could be a go-er. Watch this space.

Great looking steak, Tony. Did the Unknown Chimney Griller give you those nice diamond cross hatch sear marks? Hard to tell from the angle of the plated shot.
