98* outside and I decide I want chili for dinner. I’ve done a lot of different chilies but never on a grill. So after spending a week restoring a Dutch oven and really nice 10”CI skillet I got off of CL I decided to give them a try. D.O. for the chili and skillet for a little corn bread.

I used a rump roast diced up for the meat and some other basic chili stuff. I usually do dry beans but for the sake of not getting sun stroke I went with canned to cut the time down.

This chili starts out very thin and needs to cook down for at least 1 1/2 hours to get to the right constancy.

Came out great took a little over two hours and the meat was like butter. I used a little hickory to add a little smoke to it and it was really tasty.

Barb made some corn bread which was good

Both pans worked great with no sticking whatsoever

Wow Rick (and Barb) That's some great Chilli and Cornbread. I've got to get some cast iron so I can dup this cook :)
 
Outstanding looking chili and cornbread. I find using my CI dutch oven is a lot easier on the grill than stove top. I don't have to worry about things sticking to the bottom of my dutch oven when it on the grill indirect.

Thanks Russ, the skillet wasn't too bad but the Dutch oven was a horror story. That one took a few days of a power drill with a wire brush and a lot of scrubbing with steel wool. There was a good 1/4 inch of burned on gunk and rust on the bottom and part way up the sides.
Like I said in my other posts I love to refurb things instead of buying new especially CI as there so much of it just sitting around rusting away.
 
You did good with the CI's Rich and that chili sounds perfect. You know how I love my chili's. What were the chili peppers Quijilo's, kind of look like them?
 
When we had chili, my dad would always say: Chilly today, and hot tamale!

I just love cooking with the Dutch oven and CI skillet on the grill, if wasn't for this site I don't know that I would thought to do it. Thanks
