Last week Rich G. posted his Chili Colorado cook and it immediately went on my must try list. One problem though, Rich's post was done in the Instant Pot and it's extremely unlikely I'll ever purchase one of those. Using the recipe Rich provided I proceeded with the cook using my 7 Qt. Dutch Oven over charcoal. Came out pretty decent and was absolutely delicious. I sided it up with some of Tony R's rice.
Made the sauce the day before doing the actual cook. Used some of my recycled charcoal to toast the peppers on the JJ.
Using my food processor I made the sauce. Wow, it was good but on the extremely hot end of the scale. Put in fridge and it settled down and mellowed overnight.
Got going with the rest the next day. 4 lbs. stew meat.
Browned the meat in 3 batches.
Removed the browned meat from DO and added the onion. Gave it 3 or 4 minutes then added the garlic and jalapeno and gave it another minute or two.
Dumped in the meat.
Added my sauce and mixed well.
Got going on Tony's rice.
