Got a new toy yesterday and decided to give it a go with some shawarma. I think I need to tweak the temp/time, but this turned out pretty darn delicious and was relatively easy. I made the marinade yesterday and got it in for a 24 hour soak. After assembling the meat tower today and getting it on the Searwood, I prepped the tzatziki, cabbage, cukes and the rest of the 'sides'. Relatively low stress meal. The recipe (linked below) called for 400F, but I think 350 or 375 would do better, with maybe a little higher heat to finish. Didn't get a ton of pics, but have a before, during, and right before I wrapped shots. Anyway, I highly recommend.
Meat tower prepped:

About 90 minutes in:

Chicken sliced, side prepped, and assembled in a burrito before wrapping (didn't have any decent pita or flatbread at Wegman's).

"Meat Stack" pan on Amazon:

I am definitely looking to try some Al Pastor next.
