Man, the more I use the Slate the more I love it. Did some fajitas late last night.

Green and red bell peppers, a poblano, some sweet onion and corn.

Some chicken with a basic rub.

Served. Too much sour cream but otherwise tasty.

I am the same way Tim.
Back when you were considering the Slate and we chatted, I did give some info but like I said before I wasn't using it near enough.
Now that I keep rocking cooks through it I have come to understand it a bit more and do enjoy using it way more than I did last season.
I have a cheese steak recipe that I am anxious to get made.....will be sure to post.

Yeah, I've still got tons to learn with it but it's truly a labor of love.

It's going to be a bit before I get on it.....I have holidays in about 5 or 6 weeks....at that point I carb load like crazy because, well....holidays.
I carb load before I leave, as I have no carbs in my current diet......very low, complex carbs only I guess you could say.
So I have some claw and knucle lobster meat all ready to go already....and I have lots of ribeyes at home. Hoping for some lobster rolls and maybe a philly cheese before I sneak out for a week's holidays.

I think it's amazing that you eliminated carbs. Was it difficult?

Only at first.
You think you miss things like pizza and burgers, but it really just comes down to missing the things that you may have seen in Brett's vacaton thread....high quality stuff still tastes good of course.
Then there is beer.....there are many reasons for one to avoid beer.....it tastes pretty good however....loaded with carbs!
Once you get a ways in there is no turning back......I am doing a few things not just keto but I feel better than I have in years....its been good.
I have been taking a lot of pics of my meals, just in case someone else comes to me and wants to learn things.
Down 20 pounds or so since the spring, 15 to go...there really isn't a rush on it.
