Chicken Enchiladas

Your basic put together meal, no real cooking involved. Used Las Palmas enchilada sauce, a small can of El Pato Tomato sauce, had some smoked chicken already. Sauteed an onion chopped up the chicken, opened up the two cans of sauce then everything in a skillet to warm up. Put a little enchilada sauce in another pan so I could dip the tortillas and sauce them.

Dipped some warmed up tortillas in the sauce then used slotted spoon to dig out the chicken/onion mixture.


Placed the filled tortillas in a pan seam side down


Took the sauce that was leftover and put it over the tortillas


Added some cheese the placed the pan on the grill long enough for everything to get heated through.


Made some refried beans


Plated. Added some Mexican Creama, Sriracha sauce, lettuce and tomatos the the enchiladas. Pretty simple meal to make but can get a little messy during the assembly process.
 
"No real cooking involved" BS man!! Someone had to smoke that chicken and roll those tortilla's! You know what? You did it outside and on the grill!!

I like it!! Enchiladas with smoked chicken or turkey is the bomb!! You did it up right and now I'm starving!

Nice I'm going to do a pork butt next Monday, and I always have extra, so I think Tuesday will be a pork version of this!! Great idea.
