Chicken Enchilada Dinner and some turkey for lunches

Robert T

TVWBB Guru
Had the day off so decided to make chicken enchiladas and also smoke a turkey breast for Kim and my lunch for the week. Started the chicken last night by putting a dry rub rub on and in the fridge overnight.

Then today rubbed a turkey breast with veg oil and seasoned with Johnny's seasoned salt.

Turkey on and turned after an hour.

Meanwhile for the enchiladas grilled the chicken breasts that had been marinating overnight

Kim pausing from singing her Maroon 5 songs that she loves, and knows every word to, while cutting up the chicken breasts.

At Kim's insistence here is me assembling the enchiladas.

It was a great meal. Back to work tomorrow. Have a great rest of your week! Thanks for looking!

Nice job, both of you! I love enchiladas with leftover meats from the WSM (chicken, turkey, pulled pork, brisket, etc.....) Great looking turkey for lunchmeat, too! I have been meaning to get one of those on for our family, along with a cured loin (1/2 of the kids like ham/canadian bacon over turkey.)

Thanks for the inspiration!
