Cheddar Bacon Jalapeño Brats

No big crowd to cook for this July 4th so I wanted to try something new. Picked up these brats from a local butcher “Let’s Meat on the Avenue” in Alexandria, VA as I’ve yet to smoke sausage on my WSM. They were great! Huge chunks of cheese visible under the casing which made for very cheesy bites. The filling also contained German Lager from a local brewery, Port City, which imparted great flavor. Smoked these at 250 for about 90 minutes, flipping a couple times throughout until they reached 160 degrees. Used some cherry wood chips for a mild smoke. Happy 4th everyone!

Those are some tasty looking tubes of meat! I'm working on a cheese/pepper bratwurst variation.....still one of the best sausages I've had (Hatch chile/cheddar sausage at Cattleack BBQ in TX.)

Yes! I have been to Cattelack before actually while doing some work in the area. Best BBQ I've had! I hope to recreate their sausage one day.
